Are you sure you have the paid Shattered Space DLC installed?

The most common cause of launch crashing is users that forgot to buy and install the Shattered Space DLC on Steam. You’ll know if the DLC is missing when you see red exclamation points in your plugins tab like so:

Simply buy the DLC on Steam or whatever other update, install it, and then restart Mod Organizer 2. The exclamation points should now all be gone (besides the very bottom one).
